It’s indeed true that clips give additional support to frameless mirrors but not like it would come off the wall if none is used! These clips usually can hold 10 kgs of weight. In comparison, 10kg might be a lot of weight for adhesives to hold on to. So, the weight (size and thickness) of the mirror determines whether it would come out if no clips are used.

With the adhesive method, must I tape down the mirror after installing it?

Look, it’s not a must. The purpose of using tape after installing a mirror with adhesive is to maximize the holding power. So, you can skip it although I would recommend you to use tapes.
